I go to the grocery store a minimum of 4 times a week and that's on a good week. I'm not lying. It's super annoying. Even harder with two kids in tow who hate having to stop at the grocery store! I'm lucky if I can keep them both in the shopping cart for 5 minutes safely before one of them has to potty and the other has graciously racked the remnants of aisle 5 into my buggy. We do need to eat though so, the grocery store is inevitable.
On days that I simply cannot tackle the grocery store and I need to make dinner, I rely on my simple chicken marinade. It's super easy, it's delicious, and I always have the ingredients in my kitchen!
You'll need these 6 simple ingredients:
Half of a lemon, seeds removed
4-6 TBL spoons of Extra Virgin Olive Oil (today I used Zeta Extra Virgin with Basil & Garlic)
1 TBL spoon of Cavender's All Purpose Greek Seasoning (I USE THIS ON EVERYTHING!! I buy it on Amazon. Click on the photo below for a link.)
3 Garlic cloves, roughly chopped
1 tsp of Oregano
2 TBL spoons of Honey (today I used a Citrus Blossom Honey)
Mix all of these ingredients in a large Zip Lock bag. Place 2 Chicken breasts inside the bag and close it. Massage marinade over the chicken and be sure both breasts are completely coated. Let rest in the refrigerator for at least 30 minutes. Viola!!

Super easy marinade! 1/2 cup soy sauce, 1/4 cup cooking sherry, 1/8 cup olive oil, 1 tsp ginger 2-3 cloves garlic. I use this for Flank Steak (marinade all day and grill) and chicken. It was a recipe my mom used, she is 96!
